

Baihao Yinzhen
Unrolled, unfired, barely handled: silver buds withered on trays and dried in the open air. The least processed tea we sell and the hardest to make well.
Melon and hay in the first infusion, then honey as the cup cools. The texture is what people remember, a soft weight in the mouth rather than a flavour.
Keeps for years in a sealed tin and slowly turns towards dried fruit. We drink the current year and store the rest.
BREWING
Steep 4 g per 100 ml at 90 °C. First infusion 45 seconds, then extend generously. White tea wants time more than heat; a short steep tastes of nothing at all.
ORIGIN
Fuding, from a grower who still withers on bamboo trays outdoors and finishes in the sun when the weather allows. Bud only, no leaf, sorted by hand.
STORAGE
Store in a cool, dry place away from heat, direct sunlight, moisture and strong odours.
