

Mingqian Longjing
Pressed flat against the wok by hand, one small batch at a time, in the short window before the Qingming rains. Everything about the tea is decided in that fortnight.
Chestnut and sweet pea, a butter-thick body, and almost no bitterness. The dry leaf should smell toasted; if it smells green, it was fired too gently.
Drink it within six months. This is not a tea that improves in the tin.
BREWING
Steep 3 g per 150 ml at 80 °C in a tall glass. No lid, no rinse. Refill from a third down rather than draining the cup; the leaf keeps giving for an hour.
ORIGIN
Shifeng, above West Lake, picked in the ten days before Qingming. The garden is small and the price is set at the village auction; we buy the whole allocation or none of it.
STORAGE
Store in a cool, dry place away from heat, direct sunlight, moisture and strong odours.
