The tea that taught Europe what black tea should taste like, made from a small-leaf Anhui cultivar and rolled into fine dark wires.

Cacao and malt in the body with an unmistakable rose lift over the top, which is why it has been going into breakfast blends for a hundred and fifty years. Drunk on its own it is much finer than that history suggests.

BREWING

Steep 4 g per 100 ml at 92 °C. First infusion 20 seconds, then extend by 5 seconds per steep. Western style also works: 3 g per 300 ml for three minutes.

ORIGIN

Qimen county in southern Anhui, from a cooperative that still sorts the fine wiry grades by hand. The rose note is the cultivar, not an addition.

STORAGE

Store in a cool, dry place away from heat, direct sunlight, moisture and strong odours.
