Wuyi Shui Xian

武夷水仙

Dark, twisted leaf from old bushes in the Wuyi cliffs, roasted over charcoal until the fire has settled into the tea rather than sitting on top of it.

Cocoa and toasted grain first, then orchid underneath, and the warm mineral pull the Chinese call yan yun, the rock rhyme. It is the reason people drink these teas.

Rested six months before release. A fresh roast tastes of the fire and nothing else.

BREWING

Steep 6 g per 100 ml at 100 °C. Full boil, always. Rinse twice, then 10 seconds for the first infusion. Rock tea is the one case where hot and fast beats gentle.

ORIGIN

Grown in the weathered rock of the Wuyi valleys, where the soil is thin and the mineral character comes straight out of the ground. Roasted over charcoal in three passes across the summer.

STORAGE

Store in a cool, dry place away from heat, direct sunlight, moisture and strong odours.
